Tasty Tuesday: No Oven? No Problem!

Few things remind my husband of his childhood more than this recipe. According to his mom, she made these cookies for all school parties because the kids requested them. The best part about them...you don't have an oven? Not going to stop this cookie recipe one bit!

Here is what you need to make No-Bake Cookies:



3 cups quick-cooking rolled oats
2/3 cup peanut butter
2 cups sugar
1 stick butter
1/2 cup milk
1/3 cup cocoa
2 tsp. vanilla extract

First, line cookie sheets with aluminum foil. I usually do three.




Next, measure out the oats and peanut butter. Quick cooking tip: To make peanut butter and other sticky ingredients (like Caro syrup) easier to get out of a measuring cup, spray the inside of the cup with cooking spray. It will slide right out with minimal fuss!



Combine sugar, butter, milk, and cocoa in medium saucepan.




Cook over medium heat stirring constantly, until mixture comes to a rolling boil.






Remove from heat. Add oats, peanut butter, and vanilla.



Stir quickly, mixing well.




Immediately drop mixture by spoonfuls onto foil. Let cool.




Now enjoy! And in the case of my husband, let it take you back in time.


Every time I make these he talks with fondness about his mom. And then proceeds to eat an entire cookie sheet by himself!
